Breed
The Sulmtaler is a hardy, all-weather chicken and offers a double benefit, since it affords rich yields in both meat and eggs, making it an invaluable "royal court" in the farm yard, in particular for smaller farms in hilly locations. It thrives in free-range husbandry and, as a "good forager and field runner", prefers looking for food on its own. Thus meadows, pastures and fields comprise its favourite habitat. Cool mixed woodlands or orchards with shaded areas in summertime; and in winter, warm stables. Experts characterise it as a thrifty, racy chicken, a good layer, resistant to diseases and modest. With respect to "stabling and chicken-run, company and additional feeding", though, it demands a great deal. For instance, it is fond of dryness, light, air, cleanliness and freedom of movement. Visually, the Sulmtaler chicken is marked by its stockier build and its idiosyncratic trademark: a little crest - and an upright comb, folded in front (Wickelkamm), for the hens. Cock, hen and capon thrive and enjoy their comfortable lives five times longer than other chickens. A proven recipe for superb quality, made manifest in taste and nutrient value alike.
